Entree: Sugar Cured Ocean Trout

Sugar cured ocean trout is one of our favourite Fenix entrees and today, lovely blog readers, we are sharing the recipe with you! Served cold, this is a perfect light summer entrée, and it’s certainly a crowd pleaser! Fenix’s delicious cured trout is complemented by a side salad with Yuzu dressing. Yuzu is a Japanese citrus fruit found in specialty Asian food shops.

You’ll need to begin this recipe a day ahead.

SUGAR CURED OCEAN TROUT

Ingredients:

One side of ocean trout

Curing salts:
6 cups sugar
2 cups salt
Zest of 2 lemons
Zest of 1 lime
Fronds of 2 baby fennel chopped
½ cup Juniper berries
2 star anise
1 cinnamon quill
60 ml Hendricks Gin

Salad:

½ cup picked coriander
2 tbs sliced pickled ginger
½ sliced red onion
½ cucumber shaved
Yuzu dressing
For Yuzu Dressing:
¼ tsp wasabi
1 tsp Dijon mustard
50 ml lemon juice
50 ml Yuzu juice
1 handful coriander chopped
1 cup virgin olive oil
