Dessert: Coconut & Lime Cheesecake with Mango

It’s that time again, lucky blog readers, we’re sharing another one of our delicious recipes with you! This time, it’s one of our FAVOURITE desserts, Coconut & Lime Cheesecake with Mango. It’s easy to make and delicious!

COCONUT & LIME CHEESECAKE WITH MANGO

Ingredients
Base
• 170g plain flour
• 80g shredded coconut
• 70g brown sugar
• 100 g butter

Filling
• 1,125 kg cream cheese
• 250g brown butter
• 5 eggs
• 300ml coconut cream
• Juice of 2 limes

Sauce for Cheesecake
• 1 can Mea Ploy Coconut Cream
• 100g palm sugar grated
• ½ tsp Pandan essence
• ½ vanilla pod scraped
• ½ cup boiled sago (Tapioca Pearl)

Method

Firstly grease and line a square cake tin. Toast the base ingredients in the oven with half the butter, when brown, cool down and process with the rest of the butter.
Using an electric mixer combine the cream cheese & sugar together, add eggs & cream and lime juice and pour into tin. Bake at 160 degrees for 20 min.
For the sauce, Place cream, sugar and vanilla in a pot and reduce on low heat by 25%. Allow to cool. Add Pandan & sago and stir well.
Garnish with chopped mango & lychee
